Revel's Seasoned Soy Sauce
Makes a generous cup
Ingredients
- 1 1/2 cup plus 1 tablespoon soy sauce
- 1/2 cup mirin
- 1/2 up sake
- 2 chinese dried chilis
- 1 (1-inch) piece lemon-grass (from the tender inside of a large stalk), thinly sliced
- 1 lemon wedge
- 1 orange wedge
- 1 (2-inch) section peeled fresh ginger, cut into 1/4-inch-thick coins
- 1 bay leaf
- 1 sprig fresh thyme
- 1 teaspoon whole coriander seeds
- 1 teaspoon whole black peppercorns
Instructions
- in a large saucepan, stir together the soy sauce, mirin, and sake, and bring to a boil over high heat.
- Add the chilies, lemongrass, lemon, orange, ginger, bay leaf, thyme, coriander, and peppercorns
- Remove from the heat, let cool to room temp
- Strain and serve immediately
