Revel's Seasoned Soy Sauce

Makes a generous cup

Ingredients

  • 1 1/2 cup plus 1 tablespoon soy sauce
  • 1/2 cup mirin
  • 1/2 up sake
  • 2 chinese dried chilis
  • 1 (1-inch) piece lemon-grass (from the tender inside of a large stalk), thinly sliced
  • 1 lemon wedge
  • 1 orange wedge
  • 1 (2-inch) section peeled fresh ginger, cut into 1/4-inch-thick coins
  • 1 bay leaf
  • 1 sprig fresh thyme
  • 1 teaspoon whole coriander seeds
  • 1 teaspoon whole black peppercorns

Instructions

  • in a large saucepan, stir together the soy sauce, mirin, and sake, and bring to a boil over high heat.
  • Add the chilies, lemongrass, lemon, orange, ginger, bay leaf, thyme, coriander, and peppercorns
  • Remove from the heat, let cool to room temp
  • Strain and serve immediately
