Honey Roast Chicken

Ingredients

  • 2 lbs mixed chicken thighs & drumsticks, skin on, bone in
  • 2 red onions
  • 1 bunch of oregano (3/4 oz)
  • 2 oranges
  • 5 1/2oz ripe mixed-color cherry tomatoes
  • 2 tablespoons liquid honey
  • 3/4oz shelled unsalted pistachios
  • 3/4oz feta cheese

Instructions

  • Preheat the oven to 350F. = Put the chicken into a large cold shallow casserole pan and place on a high heat.
  • Fry for 10 minutes, or until golden all over, turning regularly, while you peel and roughly chop the onions and pick the oregano leaves.
  • Use a vegetable peeler to strip the orange peel into the pan, add the onions, oregano and 2 tablespoons of red wine vinegar, season with sea salt and black pepper and mix well.
  • Make sure the chicken is skin-side up, then roast for 45 minutes, or until the chicken pulls easily away from the bone.
  • Move the pan to a medium-high heat on the stove. Squeeze in the orange juice, quarter and add the tomatoes, and let it start to sizzle and bubble.
  • Drizzle the honey over the chicken, finely chop and scatter over the pistachios, crumble over the feta, and serve.
