One Pan Curry Chicken

Ingredients

  • Broccoli enough to fill the bottom of a glass pan (9x13)
  • Chicken - whatever you want. I use chicken breasts, about 2 lbs.
  • 24 oz sour cream
  • 1 or 2 can cream of chicken - you could substitute a cream of broc if you want.
  • 2 T of lemon juice
  • 2 T of curry powder
  • Grated cheddar - about a pound

Instructions

  • Sour cream, cream of soups, curry powder, lemon juice.
  • Steam broccoli until tender
  • Cube chicken breast and fry, season to taste,
  • Layer the glass pan with the broccoli.
  • Layer chicken breast over that.
  • Pour sauce over.
  • Add grated cheddar.
  • Cover pan with foil to prevent cheese from drying out.
  • Bake at 350 until internal temp reaches 165.
  • Serve over rice
