Green Beans with Beef

Ingredients

  • 1 pound Steak of choice (flank or skirt is preferred for quick stir fry)
  • Green beans
  • 2 cloves Garlic
  • Ginger -- 3 tablespoons diced fresh
  • Sesame Seeds
  • 1 cup cornstarch (rice flower also works, general purpose very last) per pound of beef
  • 1/4 to 1/2 teaspoon Baking soda per pound of beef
  • Salt
  • 2 tablespoon to 1/4 cup brown sugar
  • 1 tablespoon dark soy sauce (Kecap Manis ABC sweet soy sauce is used in video)
  • Optional: Add Hoison sauce (1 teaspoon to 1 tablespoon)
  • Optional: Chinese rice wine vinegar and fermented black beans for deeper tones. Chili oil to stir fry to add spicy.

Instructions

Throw steak in bowl after slicing and add 1 cup of cornstarch and a 1/4 to 1/2 teaspoon of baking soda for 1 pound of beef, pinch of salt. The salt and baking power help to extract moisture and tenderize beef. No need to add flour when cornstarch works. Marinate for 30 minutes to an hour.

In a seperate bowl, add ginger, garlic diced, and brown sugar. Add 1 tablespoon of dark soy sauce (not light or regular). You can add Chinese rice wine vinegar as optional.

After stir frying the beef for a few minutes, add in the garlic, ginger, sugar, dark soy sauce combo. Then the grean beans. Stir fry. Optionally, you can add chili oil now, fermented black beans, and sesame oil.
