InstantPot Butter Chicken

 

Ingredients

  • Canned Tomatoes. 14.5 ozs, or some amount
  • 5-6 cloves Garlic
  • Minced Fresh Ginger
  • Turmeric
  • Cayenne Pepper
  • Smoked Paprika
  • Kosher Salt
  • Garam Masala
  • Ground Cumin
  • Boneless Skinless Chicken Thighs, (or use skinless chicken breast, bone-in, or whatever works for you. If frozen, add 1-2 minutes to total time)
  • Butter cut into cubes, (use coconut oil if dairy-free)
  • Heavy Cream, (use full-fat coconut milk if dairy-free)
  • Garam Masala spice mix
  • chopped cilantro

Instructions

  1. Place tomatoes and all spiaces in the bottom of the instant pot
  2. Add chicken thighs or chicken breast
  3. If adding rice, add the rice now + the water for the rice
  4. Cook for 10 minutes on high pressure
  5. Remove chicken and set aside
  6. Add butter, cream, and 1 additional teaspoon of garam masala
  7. Stir together all that delicious sauce, then add the chicken back in, and serve.
