Corned Beef and Cabbage

Ingredients 

  • 5 pound well-trimmed corned beef brisket
  • 2 cloves garlic, crushed
  • 1 medium onion, quartered
  • 1 medium head green cabbage cut into 8 wedges

Instructions

  1. Place meat in large kettle; cover with cold water.
  2. Add garlic and onion; heat to boiling.
  3. Reduce heat; cover tightly and simmer 3 1/2 hours or until tender.
  4. Polace meat on warm platter; keep warm.
  5. Skim fat from liquid. Add cabbage; simmer uncovered 15 minutes.
