Mung Bean Pancake Batter

Make certain you find dried yellow mung beans (often labeled moong daal in Asian or Indian grocers), which are peeled, rather than the unpeeled green kind.

Can be kept warm in 300F.

Ingredients

  • 1 cup split yellow mung beans
  • 2 1/2 cups cold tap water, divided
  • 1 teaspoon kosher salt

Instructions

  1. Soak the beans. In a medium bowl, soak the beans in 2 cups of the cold water for 1 hour. They should increase in volume by ~50%
  2. In a heavy-duty blender or the bowl of a food processor, combine the beans and the remaining 1/2 cup cold water. Blend for 15 to 30 seconds on high speed or until the batter is very smooth.
