Peanut Sriracha Ground Chicken
Makes ~4 meals given 2 cups of rice and 1 pound of chicken.
Ingredients
Go to the store or have available:
- 5+ scallions (green onions. a pack from the produce section is what I use)
- garlic (to taste. Paste or diced, doesn't matter)
- 1 lb ground chicken
- Unsalted or salted peanuts (I use just 1/3 to 1/2 cup)
- Some type of oil. I most commonly use peanut or extra light olive oil. If you want to make it very spicy substitute some amount of chili oil.
For the sauce:
- 1/4 cup soy sauce (I use reduced sodium)
- 1/2 cup chunky peanut butter
- 3 tablespoons honey
- 3 tablespoons siricha
- < 1 tablespoon oil to smooth the sauce
- < 1 tablespoon hot water to incorporate the sauce
Instructions
- In a cereal bowl (or equivalent size) mix all the sauce ingredients except the oil and water. Once its evenly mixed, add the oil, then finally the hot water.
- Clean + dice the scallion. Separate the white parts, keep the green parts for garnish later.
- Preheat pan to medium heat (I do 6/10), add 1 to 2 tablespoons of your preferred oil as mentioned above.
- Throw in garlic, scallion whites, cook until beginning to brown
- Add ground chicken to pan, breaking it up with a wooden spoon.
- Continue cooking chicken until entirely cooked through. Break up any big pieces.
- As chicken is almost done, add the peanuts!
- After chicken is entirely cooked through, press all the meat up against one side of the pan and drain the excess grease/fat.
- Add the sauce
- Cook until thickened!
Serve over rice, garnish with green parts of diced green onion.
