Peanut Sriracha Top Ramen
Makes ~4 meals given 2 cups of rice and 1 pound of chicken.
Ingredients
Go to the store or have available:
- 5+ scallions (green onions. a pack from the produce section is what I use)
- garlic (to taste. Paste or diced, doesn't matter)
- Bok Choy
- 3 packages Top Ramen
- Broccoli
- Unsalted or salted peanuts (I use just 1/3 to 1/2 cup)
- Some type of oil. I most commonly use peanut or extra light olive oil. If you want to make it very spicy substitute some amount of chili oil.
For the sauce:
- 1/4 cup soy sauce (I use reduced sodium)
- 1/2 cup chunky peanut butter
- 3 tablespoons honey
- 3 tablespoons siricha
- < 1 tablespoon oil to smooth the sauce
- < 1 tablespoon hot water to incorporate the sauce
Instructions
- In a cereal bowl (or equivalent size) mix all the sauce ingredients except the oil and water. Once its evenly mixed, add the oil, then finally the hot water.
- Clean + dice the scallion. Separate the white parts, keep the green parts for garnish later.
- Cook top ramen, just plain
- Remove the top ramen, and water (saving some!)
- Throw in garlic, scallion whites, some oil, cook until beginning to brown
- Add bok choy, broccoli, cooking until just beginning to soften
- Add the sauce
- Add the top ramen
- Add any water back to make certain it moves well
- Serve!
