Cucumber Kimchi

This is a very refreshing snack on along the lines of the quick pickle cucumbers.

Cucumber Kimchi

Ingredients

  • 7 Persian cucumbers (or regular hothouse) cut into coins
  • 1 tablespoon salt
  • 2 tablespoon gochugaru flakes
  • 4 cloves garlic
  • 1 teaspoon sugar
  • 1 tablespoon Rice wine vinegar
  • 1 to 1.5 teaspoon sesame oil
  • Sesame seeds for texture

All of these ingredients can be shifted around to taste.

Instructions

  • Throughly mix the salt with the cucumbers in a large bowl
  • Leave out for 10 to 30 minutes
  • Look in the bottom of the bowl, moisture pulled out of cucumbers? good
  • Throughly rinse the cucumbers in cold water to get the salt off
  • Place back in bowl
  • Minch/crush the garlic and toss in the bowl with the rest of the ingredients
  • Mix and enjoy!
