Cucumber Kimchi
This is a very refreshing snack on along the lines of the quick pickle cucumbers.

Ingredients
- 7 Persian cucumbers (or regular hothouse) cut into coins
 - 1 tablespoon salt
 - 2 tablespoon gochugaru flakes
 - 4 cloves garlic
 - 1 teaspoon sugar
 - 1 tablespoon Rice wine vinegar
 - 1 to 1.5 teaspoon sesame oil
 - Sesame seeds for texture
 
All of these ingredients can be shifted around to taste.
Instructions
- Throughly mix the salt with the cucumbers in a large bowl
 - Leave out for 10 to 30 minutes
 - Look in the bottom of the bowl, moisture pulled out of cucumbers? good
 - Throughly rinse the cucumbers in cold water to get the salt off
 - Place back in bowl
 - Minch/crush the garlic and toss in the bowl with the rest of the ingredients
 - Mix and enjoy!
