Frozen Chicken Breast Pancake

Ingredients

  • 1 frozen chicken breast
  • 1 Shallot
  • 2 potatoes
  • 1 Egg
  • Season with salt and black pepper
  • 1/2 tsp Oregano
  • 200 g (7 oz. ) Mozzarella cheese
  • 2 tbsp Olive oil
  • 1 tbsp butter (optional)
  • Parsley (optional)  

    Instructions

  1. Leave chicken breast frozen. Grate it.
  2. Slice up a shallot
  3. Grate 2 pottatoes
  4. Mix everything together in a bowl
  5. Flatten into a large thin patty with two plates
  6. Pan fry for 15-17 minutes on one side covered (lowish heat)
  7. Flip using a plate. Pan fry another 15-17 minutes.
